Using the convection oven. (on some models)The convection oven fan shuts off when the oven door is opened. DO NOT leave the door open for long periods oftime while using convection cooking or you mayshorten the life of the convection heating element.To help you understand the differencebetween convection bake and roast andtraditional bake and roast, here are somegeneral guidelines.Convection BakeIdeal foor evenly browned baked foods cookedon multiple racks.Good for large quantities of baked foods.Good results with cookies, biscuits, brownies,cupcakes, cream puffs, sweet rolls, angel foodcake and bread.Heat comes from the heating element inthe rear of the oven. The convection fancirculates the heated air evenly over andaround the food. Preheating is notnecessary with foods having a bake timeof over 15 minutes.Convection RoastGood for large tender cuts of meat, uncovered.Heat comes from the top heatingelement. The convection fan circulatesthe heated air evenly over and aroundthe food. Meat and poultry are brownedon all sides as if they were cooked on arotisserie. The heated air seals in juicesquickly for a moist and tender productwhile, at the same time, creating a richgolden brown exterior.When you are convection roasting, it isimportant that you use a broiler pan andgrid designed for broiling for bestconvection roasting results. The pan isused to catch grease spills and the grid isused to prevent grease spatters.In a convection oven, a fancirculates hot air over, under andaround the food. This circulatinghot air is evenly distributedthroughout the oven cavity. As aresult, foods are evenly cooked andbrowned - often in less time thanwith regular heat.Adapting Recipes…You can use your favorite recipesin the convection oven.Use pan size recommended.Some package instructions for frozencasseroles or main dishes have beendeveloped using commercial convectionovens. For best results in this oven,preheat the oven and use thetemperature on the package.Cookware for Convection CookingBefore using your convection oven, checkto see if your cookwareleavesroom for aircirculation in the oven. If you arebakingwith severalpans, leave spacebetweenthem. Also, be sure the pans do not toucheachother or the walls of the oven.Paper and PlasticHeat-resistantpaper and plasticcontainersthat arerecommendedfor use in regular ovens canbe used inconvection ovens. Plastic cookwarethatis heat-resistantto temperaturesof205°C(400°F) canalso be used, whenoven is below 205°C(400°F).Metaland GlassAny type of cookwarewill work in yourconvection oven. However, metal pansheat the fastestand arerecommendedfor convection baking.Darkened on matte-finished pans will bakefaster than shiny pans.Glass or ceramic pans cook more slowly.When baking cookies, you will get thebest results if you use a cookie sheetinstead of a pan with low sides.For recipes like oven-baked chicken,use a pan with low sides.
