Remove the flue cover by lifting it straightup. Be careful not to scratch the surroundingstainless steel surfaces during removal of theflue cover.The two inner screws are clamping screws forsecuring the griddle in place. Loosen these twoscrews before leveling. Do not remove these twoscrews.The two outer screws are leveling screws. Do notremove these two screws. They can be turned tolevel the griddle or to provide a forward slope tohelp grease and oils to drain away from the foodbeing cooked. After the first few uses, you will beable to judge the slope best suited for the foodsyou are cooking and personal preference.After leveling the griddle, tighten the clampingscrews to secure griddle in place. Clean the griddle thoroughly with hot, soapywater to remove any protective coating.2. Wipe the surface using a solution of 1 quartwater and 1 cup white vinegar. Dry thoroughly.3. Brush 1 tablespoon vegetable shortening evenlyacross the griddle. Do not use corn oil as it canget sticky.4. Turn the control knob to 350°F for approximately30 minutes. Turn the heat off when the oil beginsto smoke. Allow the griddle to cool.5. Repeat Step 3. Be sure to cover the entiresurface with the shortening.6. Repeat Step 4. Allow the griddle to cool. Wipethe entire surface of the griddle using a heavycloth. Brush the surface with a very thin layer ofshortening. The griddle is now ready to use.Usingthe griddleThe griddle surface is a combination of highlypolished Type 304 stainless steel and an aluminumthermal plate for even heat distribution. It isnormal for it to darken with use as oils cook ontothe surface to provide a stick-resistant base or“seasoning.”The griddle is thermostatically controlled and canbe set to maintain any temperature from 200ºFto 450ºF.NOTE: Unlike the surface burners, which useelectric igniters, the griddle uses a Glo-Bar forignition. It takes approximately 45 seconds forthe Glo-Bar to reach temperature. Gas is onlysupplied to the griddle once the Glo-Bar reachestemperature.To heat the griddle, push in the control knob and turnto the desired temperature setting. The light on thebezel will glow to indicate the thermostat controlis working.*NOTE: Place bacon on a cold griddle.Do not preheat.
