It is designed to provide durable service whentreated with ordinary care. We have a few suggestionsto follow on the care of your motor. When the motor isoperating, it cools itself internally by air entering at the rearof the motor case, provided proper clearance has beenallowed.Since the blower wheel is in the oven cavity it is at the sametemperature as the oven. If the motor is stopped while theoven is hot, the heat from the blower wheel is conducteddown the shaft and into the armature of the motor. Thisaction could shorten the life of the motor. We recommend, at the end of the bake or roasting period, when the oven will be idle for any period of time, or beforeshutting down completely, that the doors be left openslightly. On the Summit 45 series controller press the COOLDOWN key on the control panel. The fan will continue to rununtil the oven cools down to 150°F (66°C).At the end of the day, on the Summit 45 series controllerpress the ON/OFF key to activate the Auto cool DownFeature. The fan will run on high until the oven cavity dropsbelow 150°F (66°C) the oven turns off. This feature protectsthe oven motor from pre-mature failure. On the Summit 20series controllers, push the rocker switch to COOL position.Once cool, set the rocker switch to OFF.NOTE: Optimal cool-down will be achieved with the dooropen slightly.
