DO NOT leave the door open for long periods of timewhile using convection cooking.To help you understand the differencebetween convection bake and roast andtraditional bake and roast, here are somegeneral guidelines.Convection Bake■ Preheat the oven. See the Using the Oven–Preheating and Pan Placement section.■ Ideal for foods cooked on multiple shelves.■ Good for large quantities of baked foods.■ Good results with cookies, biscuits,brownies, cupcakes, cream puffs, sweetrolls, angel food cake and bread.The convection fan circulates the heatedair evenly over and around the food.Convection Roast■ Good for large tender cuts of meat,uncovered.The convection fan circulates the heated airevenly over and around the food. Meat andpoultry are browned on all sides as if theywere cooked on a rotisserie. Heated air willbe circulated over, under and around thefood being roasted. The heated air seals injuices quickly for a moist and tender productwhile, at the same time, creating a richgolden brown exterior.Roasts or poultry should be cooked on shelfposition (A).When you are convection roasting, it isimportant that you use a broiler pan and gridfor best convection roasting results. The panis used to catch grease spills and the grid isused to prevent grease spatters.■ Place the shelf in shelf position (A).In a convection oven, a fancirculates hot air over, under andaround the food. This circulatinghot air is evenly distributedthroughout the oven cavity. As aresult, foods are evenly cooked andbrowned—often in less time thanwith regular heat.NOTE: To maximize cookingevenness, the fan is designed torotate in both directions with apause in between. This is normal.Auto Recipe™ ConversionYou can use your favorite recipes in theconvection oven.When using CONVECTION BAKE, the ovenwill automatically convert the oventemperature from regular baking toConvection Bake temperatures.Using the number pads, enterthe temperature recommendedin the recipe.Touch the START pad.The display will show the temperatureyou entered from your recipe. Theoven will automatically convert it tothe convection cooking temperature.Touch the CLEAR/OFF pad whenbaking is finished.■ Use pan size recommended in the recipe.■ Some package instructions for frozencasseroles, main dishes or baked goodshave been developed using commercialconvection ovens. For best results in thisoven, preheat the oven and use thetemperature, for regular baking, on thepackage.
