77Dehydrating/DefrostingThe range can be used to dehydrate ordefrost foods at low heat settings in “PureConvection™” mode (ERD models only).Follow these steps to dehydrate or defrostfoods:1. Position oven rack(s) at the properheight(s).2. Place the food onto the center of the ovenrack. (For dehydrating, prepare food asrecommended then place food onto adrying rack.)3. Press the “PURE CONVECTION™” pad.4. Set the temperature to 135˚F. This is theminimum temperature that can be set. (Fordehydrating, a higher temperature settingmay be required. Follow the recommendedtemperature for the type of food beingprepared.)5. It is recommended that the user set theMinute Timer(s) to time the process.BroilingBroiling is a quick and flavorful way to preparemany foods, including steaks, chicken, chops,hamburgers and fish. Broiling in the oven iscompleted with the oven door completelyshut. It is normal and necessary for somesmoke to be present to give the food a broiledflavor. The broil temperature may be adjusted in5˚F increments from 135˚F up to the maximumsetting of “HI”. The “HI” setting is equivalent to555˚F.TIMER 1 CLOCK STOP TIME TIMER 2BROILONBROILONClock display in Broil(ERD48 & ERDE48 Only)TIMER 1 CLOCK STOP TIME TIMER 2BROILONClock display in Broil(ERD30, ERG30, ERD36, ERDE36 and ERG36)Follow these steps to operate the oven inStandard Broil (all models) or ConvectionBroil (ERD48/ERDE48 left oven only) modes:1. Close the door tightly.2. Press the “BROIL” or “CONVECTIONBROIL” (ERD48 left oven only) pad.3. Press the “TIME•TEMP” “+” or “–” pad andthe default temperature setting “HI” will bedisplayed. “HI” is equivalent to 555˚F.4. If a temperature other than “HI” is desired,press the “TIME•TEMP” “–” pad to reducethe temperature. Six seconds after settingthe temperature, the “ON” indicator will lightup in the clock display, the broiler elementwill begin heating, and the cooling fan willturn on.5. It is recommended that the user setthe Minute Timer(s) to time the broilingprocess.6. When the Minute Timer expiresand/or the food is cooked, press the“CANCEL•SECURE” touch pad to turn offthe oven. The cooling fan will continue torun for 30 to 45 minutes depending uponthe length and temperature of the broilingprocess.NOTE:For broiling and top grill tips refer to yourDacor cookbook. Ifyou did not receive your cookbook, pleasecontact Dacor at (800) 793-0093 or at www.dacor.comSelecting the Proper CookwareUtensils will affect the overall safety andperformance of cooktop cooking, so it isimportant to select them carefully. An improperlyselected utensil will not cook efficiently orevenly. For best results, follow these guidelines:1. Use medium to heavy-gauge metalcookware with flat and smooth bottoms forgreatest efficiency.2. Use utensils with tight fitting lids to retainheat, odors, and steam.Burner ControlsIndicators have been placed on the controlhousing, next to each control knob, to clearlyidentify the burner controlled by each knob.To indicate whether the knob controls burnerson the left or right, the knobs are groupedaccordingly. The burner being controlled isindicated by a blue indicator light, while theadjacent burner is illustrated by a flame icon onthe control panel.To light a particular burner, press in on thecorresponding control knob, then immediatelyrotate the knob counterclockwise from the off(ø) position to the “HIGH” position (larger flameicon). All ignitors will spark continuously untilthe gas ignites on the selected burner. Ignitionshould occur within four seconds of turning tothis position. The ignitors will stop sparking assoon as the burner ignites.Once the burner is lit, reduce the flameheight by rotating the control knob furthercounterclockwise, then place the utensil on thegrate. Progressively lower flame heights areachieved as the knob is turned toward the smallflame icon (counterclockwise).IMPORTANT:1. If the gas does not ignite within fourseconds, then turn off the valve. Allowat least five minutes for any gas todissipate, then repeat the lightingprocedure.2. Burner ignitors must always be keptclean and dry to function properly.Due to the Perma-Flame re-ignitionfeature, dirty or wet ignitors will resultin constant sparking, even if there isa flame present. Additionally, ignitorswill spark automatically if the flame isdistorted by a draft or by a ventilationsystem. Eliminate the draft or reducethe ventilation blower speed in thiscase.3. Do not touch any burner cap, burnerbase, or ignitor while the ignitors aresparking. An electrical shock couldresult.4. When the cooktop is cool and/or morethan two burners are in use, the ignitorsmay continue to spark if the controlknob is set to the “LOW” position. Thisis normal until the burner warms up.The tendency to spark under theseconditions can be reduced by operatingthe burner at a higher flame settingfor a short period of time (normally60 seconds or less), then adjustingthe control knob down to the “LOW”setting. The burner will also warm upfaster if a utensil is placed on the grate.5. The flame should be steady and blue incolor. Foreign material in the gas line,especially in new construction, maycause an orange flame during initialoperation. This will disappear withfurther use.6. The flame should burn evenly aroundthe perimeter of the burner, exceptunderneath each grate support finger,where the flame height is reduced bythe Smart-Flame feature. If the flame isuneven, ensure that the brass burnerring and porcelain burner cap areproperly positioned, then check for anyforeign material in the burner ring oron the burner cap. Remove any foreignmaterial with a straightened paper clip,wire, or needle. Do not damage thebrass or distort the shape of the burnerring ports.7. Never light the burners with a matchor other open flame. If a burner doesnot ignite, consult the Troubleshootingsection of this manual.3. The time required to preheat the oven mustbe included in the “COOK TIME.” Thus,the “COOK TIME” should be increased byabout 8 to 12 minutes depending upon thetemperature setting. The broiler does notcome on to preheat in the Delay Mode, soyou will not pre-maturely brown foods.NOTE:The gas broilers (ERD model only), orElectrical Glass Broilers (ERDE model only),are not activated for Pre-heat in the Delay-Time cooking mode, so Pre-Heat times areincreased - but dishes will not pre-maturelybrown. |
