To light a surface burner, holda lit match to the burner head, then slowly turn the surfacecontrol knob to LITE. After burner lights push in and turnknob to desired setting. Use therecommendations below as a guide for determining properflame size for various types of cooking. The size and typeof utensil used and the amount of food being cooked willinfluence the setting needed for cooking.*These settings are based on using medium-weight metalor aluminum pans with lids. Settings may vary when usingother types of pans. The color of the flame is the key toproper burner adjustment. A good flame is clear, blue andhardly visible in a well-lighted room. Each cone of flameshould be steady and sharp. Clean burner if flame is yellow-orange.Regardless of size, always select cookware that is suitablefor the amount and type of food being prepared. Select aburner and flame size appropriate to the pan. Never allowflames to extend beyond the outer edge of the pan.Never extend the flame beyond the outer edge of theutensil. A higher flame wastes heat and energy andincreases your risk of being burned by the flame (Figure 1).For deep fat frying, use a thermometer and adjust thesurface control knob accordingly. If the fat is too cool, thefood will absorb the fat and be greasy. If the fat is toohot, the food will brown so quickly that the center will beundercooked. Do not attempt to deep fat fry too much foodat once as the food will neither brown nor cook properly.Setting the Regular or Simmer Burners1. Place cooking utensil on surface burner.2. Release the knob androtate to the LITEposition.4. Visually check that theburner has a flame.5. Once the burner islit, continue to turncounterclockwise tothe desired flame size.The control knobs donot have to be set ata particular setting.Use the knob indicatorsettings to adjust theflame as needed.Important notes:• DO NOT cook with the surface control knob left in theLITE position. (The electronic ignitor will continue to sparkif the control knob setting remains in the LITE position).• When setting any surface control knob to the LITEposition, all electronic surface ignitors will spark at thesame time. However, only the surface burner you aresetting will ignite.• NEVER place or straddle a cooking utensil over twodifferent surface cooking areas at the same time. Thiscan cause uneven heating results.
