Using the Downdraft SystemDowndraft Vent SystemTo use thedowndraftsystemTo raise the downdraft vent, press the ON/OFFpad on the control. The vent will rise.Press the Fan Speed HIGHER pad to start theblower. Adjust the blower by pressing HIGHER orLOWER. The blower, if left on, will automaticallyturn off when the vent is lowered.NOTE: For most convenient operation, set theblower to the speed you use most often. Theblower will come on to this speed wheneverthe unit is raised.IMPORTANT: The vent can be activated bypressing the pads on the switch. Do not useexcessive force or sharp objects to activatethe switch. Damage could occur and voidthe warranty.Whenusing thedowndraftsystem…CAUTION: Be careful when raisingor lowering the downdraft. It may take longer to reach high cookingtemperatures if the downdraft is turned to highright away. Adjust the fan speed for best cookingresults.For best results when heating oil for deep fryingor when boiling water, use the front surfaceunits or wait until the water is boiling or the oilis at frying temperatures before turning on thedowndraft.The downdraft may not completely capture allthe steam from pans on the front burners.Canning When canning foods in a water-bath canner,a gentle but steady boil must be maintainedcontinuously for the required time.When canning foods in a pressure canner, thepressure must be maintained continuously forthe required time.Use of the blower on a high fan speed settingwhen canning may reduce the temperatureenough to stop boiling. While canning, werecommend using the downdraft at a lowerspeed and using the front surface unit.IMPORTANT: If the vent is obstructed by anobject while it is being raised or lowered, it willstop.
