RECIPES46Sally’s Oatmeal Cookies1 cup vegetable shortening3⁄ 4 cup brown sugar3⁄ 4 cup granulated sugar1 1⁄ 4 cups flour1 tsp. baking soda1⁄ 2 tsp. salt1⁄ 2 tsp. ground cinnamon1⁄ 4 tsp. ground allspice3 cups rolled oats1⁄ 2 cup raisins1⁄ 2 tsp. vanilla extract2 eggs1⁄ 2 cup chopped walnuts, choppedPreheat oven to 325˚F on Pure Convection™.In a mixer, cream together vegetable shortening, brown sugar and granulated sugar. Add vanilla extract and eggs and beat on lowspeed. In a small bowl, sift together flour, baking soda, salt, cinnamon and allspice. Gradually add to the mixer. Mix until combined.Stir in rolled oats, raisins and walnuts. Drop by rounded tablespoonfuls on two lightly greased cookie sheets. Bake until light goldenin color, about 11-13 minutes.Makes about 2 dozen.
